Are Pasta and Plantain the Perfect Pair?
Welcome back to Vital Ital! In this edition, we will be cooking an easy breezy cheesy pasta. You’ll definitely love this recipe because not only is it simple to do, but it’s also delicious and budget-friendly!
Let’s start with the basics: grab a handful of mushrooms, a clove of garlic and a spring onion. Slice the mushrooms thinly and mince the onion and garlic.
Add 1 tsp of vegan butter to a saucepan and put it on medium heat. Toss the veggies in the pan and cook until the mushrooms have shrunk to half their size.
Add your favourite pasta sauce to the mushroom mix and cook thoroughly for 5 minutes on medium heat.
Take a large pot and add water to it (no need to fill it). Put it on your stovetop on high heat. Add a capful of olive oil and a pinch of salt. Bring to a boil.
Add 2 cups of gluten-free pasta to the boiling water. I wanted to be different and combined 1 cup of mixed grain penne with 1 cup of brown rice fusilli. It’s all pasta, right? Let it cook for 5-7 minutes, then drain.
And now the fun begins! Take 1 ripe plantain and cut it into thick slices. Toss onto a baking pan and add 1 tsp of butter. Feel free to add your favourite seasoning for extra flavour!
Pop the plantain in the oven or air-fryer and cook on 400°F for 15 minutes or until crispy and brown.
Now grab a ceramic pasta dish! Pour your cooked pasta into the dish. Pour the mushroom pasta sauce over it and sprinkle about 1/4 cup of vegan cheese on top.
You can stick the pasta in the oven on 300°F for 10 mins or until the cheese has melted. Top with plantain and enjoy! Not only is this perfect pair appetizing to look at, it’s also delicious and hard to distinguish from non-vegan/non-gf pasta. Even your kids won’t know the difference!
